Microwave Banana Muffins

You know how sometimes you really, really just want some banana bread? But if you make a whole loaf, it will take over an hour, and I know I would end up eating half the loaf without thinking. This muffin recipe is perfect for those times. It takes just about 2 minutes to throw together and will satisfy you with a perfect single serving muffin!

Individual Banana Muffin
3 tablespoons brown rice flour (or other flour)
2 tablespoons mashed banana
2 tablespoons unsweetened almond milk
1/4 teaspoon vanilla extract
pinch salt
1/4 teaspoon cinnamon
1/4 teaspoon baking powder
1-2 teaspoons honey or maple syrup, depending on how ripe your banana is

1. In a small bowl or mug, mix all ingredients together.
2. Microwave the batter in a mug on high power for 90 seconds.
