Cinnamon Raisin Quinoa Bars

These sweet and moist bars are packed with protein from chickpea flour and quinoa, plus omega-3 from flaxseeds.They freeze really well--I wrapped them individually in plastic wrap and froze them, then I pack them in my lunch or stick them in the microwave for 20 seconds to eat them as a snack. Yum!

Cinnamon Raisin Quinoa Bars
2 cups cooked quinoa
1 cup old fashioned oats
1 cup chickpea flour
1/2 cup sucanat
1/4 teaspoon salt
1/2 cup flaxseed meal
1 teaspoon cinnamon
1/2 cup unsweetened applesauce
1/2 cup almond milk
2 egg whites
1 teaspoon vanilla extract
1/2 cup raisins

1. Heat the oven to 350 degrees F.
2. In a large bowl, combine the quinoa with the rest of the dry ingredients (oats through cinnamon).
3. Add the remaining ingredients and stir to combine.
4. Spread the batter into a greased 8 inch square pan, and bake for 28-30 minutes, until the bars are set.
