One thing I realized not too long ago is that I love dates. They are sticky, chewy, super sweet, and brown-sugar-caramel-deliciousness. When I finally got a big bag of them from Costco, I knew I had two options: 1. Eat all of them at once and feel sick (It's impossible to eat just one) 2. Cook with them and pawn them off on others so I don't eat them all. I decided to opt for #2, and that's how this recipe was created!
This almond date butter is smooth, sticky, sweet, nutty, amazing, and tastes as decadent and non-healthy as a batch of cookie dough...yet it's got just a few natural ingredients and comes together in a snap!
Almond Date Butter
1 packed cup pitted dates
1 cup toasted almonds
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup almond milk or skim milk
1. Combine all ingredients in a food processor and pulse until finely chopped.
2. Leave the porcessor on and let it go until it's nearly smooth.
3. Add in the almond milk and process until smooth and creamy.
-To toast almonds easily, I spread them out on a paper towel in the microwave and microwave them for 2 minutes, stir them around, then microwave for another minute. Pay attention to your almonds, since microwave powers vary and you don't want them to burn!
-Spread this on just about anything--it's amazing on apples, bananas, graham crackers, toast, your finger...
