This is one of my favorite breakfasts, and you can store extras in the fridge. Then, just microwave for a minute to reheat and enjoy baked oatmeal all throughout the week.
Valentine's Day Baked Oatmeal
2 cups old-fashioned oats
1 teaspoon vanilla extract
1/2 cup unsweetened applesauce
1 tablespoon strawberry preserves
2 tablespoons pure maple syrup
1 cup unsweetened almond milk
1 teaspoon baking powder
1. Heat oven to 350 degrees F.
2. Mix all ingredients in a large bowl.
3. Divide the mixture evenly between 4-6 individual greased ramekins, then place the ramekins on a baking sheet.
4. Bake for 18-24 minutes.
